Chef Montgomery Lau had recently launched his Summer menu, Lawrence and I had the pleasure to try several of these summer inspired dishes.
1st dish:

With chèvre, white pepper, basil, celery hearts, strawberry vinaigrette, outstanding presentation and a refreshing take on a salad.
2nd dish:

Butter Lettuce & buttermilk dressing

With avocado, charredCorn, flax seed crisp, Smits & co aged Gouda, delicious and light.
3rd dish:

Charred Smoked Scallops
Charred Smoked Scallops with watercress, baby beets, rye crisp, salmon caviar, perfectly cooked scallops.
4th dish:

Brioche Crusted Halibut
Brioche Crusted Halibut (BLT) with roasted fingerling potatoes, charred gem lettuce, confit Campari tomato, bacon emulsion; my favourite dish of the night, halibut melted in my mouth, tender fish and flavourful with the emulsion and other components.
5th dish:

Olive oil poached Nova Scotia lobster
Olive oil poached Nova Scotia lobster with linguini, zucchini ribbons, garlic, chills, tomato broth, a great marriage of flavours.
