Earlier in the month, Executive Chef Warren Chow launched his new Summer menu, I visited recently with my friend and podcast co-host Zahra Alani to try several dishes from their new menu.
1st dish:

Cured BC Salmon
Cured BC Salmon, leek ash, horseradish crème frâiche, peas, squid ink cracker, loved this dish which showcased BC so very well.
2nd dish:

Gratin,
Gratin, a vegan dish with roasted seasonal vegetables, brussel sprouts, tempura squash blossom, cashew ‘cheese’ sauce; loved this plant-based dish which was full of flavours.
3rd dish:

Grilled Lamb Saddle
Grilled Lamb Saddle with wild rice agrodolce, garlic chips, pickled cherry, my favourite dish off the summer menu, loved the pickled cherries component and well at played out wth the rest of the ingredients.
4th dish:

House-made Sourdough bread and pretzel

5th dish:

Potato Gnocchi
Potato Gnocchi with green onion pesto, pickled charred garlic scapes, bc mushrooms, tofu burrata
6th dish:

the Scallops
the Scallops with ricotta tarragon gnudi, cauliflower puree, glorious organics mixed salad
7th dish:

vegan Sunflower Bowl
the vegan Sunflower Bowl with blue sunflower seeds, creamed black kale
8th dish:

Rum Baba
Rum Baba with vanilla ice cream with speculoos cookies, an outstanding dessert and my favourite of the two.
9th dish:

Mascarpone Cheesecake
