Since I love mole and have always loved mole, attending a media tasting of how to make mole had me front and centre yesterday. La Mezcaleria hosted a gathering that featured Chef Susana Trilling from Oaxaca, Mexico who was in Vancouver to participate in Eat Vancouver as well as the Tequila Expo.

Together Chef Susana Thrilling and the La Mezcaleria Executive Chef Alejandro Cruz guided us through the making of Mole. Susana’s bio is vast, although born in Philadelphia, she has lived in Oaxaca, Mexico since 1988 giving classes in her kitchen at Rancho Aurora where she wrote My Search for the Seventh Mole, A Story with Recipes (1996) and Seasons of My Heart; A Culinary Journey Through Oaxaca, Mexico which is accompanied by a 13 part PBS series of the same name (1999).

Making Mole is fairly complex, taking hours and a lot of patience stirring and stirring, this is a great video that I found if you wish to learn more about the making of mole from Susana.

The mole recipe that Chef Susana Thrilling and Executive Chef Alejandro Cruz made for us is the recipe used at La Mezcaleria for their own dishes and I loved eating the dish.
