I recently explored this new Soupology Cookbook by Drew Smith that features the art of soup from six simple broths
Many of the soup recipes are based on using one of the 6 broths, it’s basically a two step process to create some of the soups in the book.
The Vegetables chapter features a recipe for Vegetable Tea which is the vegetarian based broth which is then used in a multitude of recipes throughout the chapter.
Roast Tomato Soup, Carrot, Rice and New Potato soup are some of the recipes that looked great.
Chicken and other birds chapter features, a Roast Chicken Broth recipe which is then used in a multitude of recipes throughout the chapter.
There are other soup recipes which don’t require the addition of the simple broths, these are a little simpler to make such as the Proper Borscht or the Tortilla and Lime Soup.
