Visited last week to taste a selection of new dishes from new Executive Chef Devin Blaney’s winter menu, he has added his twist to the Spanish inspired menu.
1st dish:
Gamboa al Ajillio prawns, chili, white wine, almonds, parsley, garlic, served with prawn toast.
2nd dish:
Coca with wild mushrooms, caramelized onion, chorizo, truffle oil
3rd dish:
Yam Croquetta with Sofrito, capers, pine nuts.
4th dish:
Croquetta de Bacalao salted cod, burnt orange emulsion, fennel
5th dish:
Poutine de la Bravas with smoked chorizo, charred-Tonato gravy, pepper aioli, cheese curds
6th dish:
Con Atún y Jamon Seared Albacore Tuna, Artichoke, Serrano Ham, Picada, Piparra.
7th dish:
Smoked sea salt Churros with an ancho Chili spiced chocolate
My Take:
It was great to see how Chef Devin Blaney was able to create a menu that focuses on the traditional dishes of Spain adding his Westcoast twist. I loved the delicious Gamboa al Ajillio with prawns, in a sauce made of chili, white wine, almonds, parsley, garlic, served with an equally delicious prawn toast. The Coca was oustanding with the caramelized onion and mushrooms, chorizo, and a light dash of truffle oil. The Yam Croquetta was also outstanding and would be a great sharing dish as well. The Croquetta de Bacalao of salted cod, burnt orange emulsion, fennel was flavourful and the perfect combo. The Poutine de la Bravas was another unique creation with the perfect amount of cheese and gravy. Lastly since I am a fan of the churros dessert, this one was a heavenly creation mixing in the smoked sea salt on the churros with the spicy ancho chili spiced sauce for dipping.
