Spring Menu Preview at The Vancouver Fish Company

I was invited to preview the new Spring menu and to taste these new dishes from Chef Summer Stuart before the official spring menu launch on April 11. For their spring menu they have incorporated Asian flavours from many of the staff who have worked in the restaurant over the years. My friend Jason joined me to taste through this new exciting menu.

1st dish:

Filipino inspired Prawn and Coconut Soup with Pineapple & Chilies and this was delicious.

2nd dish:

Scallop Crudo with fennel, apple, orange, dill

3rd dish:

Black pepper crab over-top an Asian slaw, loved the flavours of the sauced outer shell, it was time consuming to crack the crab legs, having me wish that the server or chef had cleaned the crab for me.

4th dish:

Arctic char with Nori purée sand miso fennel, wonderful fish and flavours.

5th dish:

Sturgeon with chili bok choy and king oyster mushroom; the fish was dense in texture but ever so delicious.

6th dish:

Halibut with Japanese eggplant, and charred poblano and jalapeño; loved the tender, flavourful Japanese eggplant and the charred poblano which made for a great combo.

7th dish:

White Chocolate Dream with blueberry and corn creme; this was a wow dessert which worked all so well.
