Ocean Wise Seafood Festival and some dishes to Savour

Ocean Wise kicked off their National Seafood festival on February 1st and as one of the Ambassadors I hit the ground running. Over the past couple of weeks, I tried a selection of seafood dishes.

One of the tantalizing dishes that I tried was at Holt’s Cafe – the Kyuquot Sound Sable Fish and White miso chowder with Smoked sable terrine, Pickled potato, Brussel sprout, Mustard seeds, Fennel oil ; created by Chef Aaron Hoffman. It was both elegant and delicious and it is still being offered in the restaurant daily until the end of the month.

Over at Hello Nori on Robson they are offering one of their hand rolls, the Spicy Shrimp Roll.  Hello Nori is the first Vancouver Japanese handroll bar in BC, proud to offer mouthwatering crispy hand rolls filled with warm rice and the freshest, locally sourced and sustainable seafood and produce. Each of their handrolls is served one at a time and should be eaten immediately to savour the crunchy nori in delicious contrast to the cold, fresh seafood.

Organic Ocean Seafood is one of the suppliers in this year’s festival that delivers frozen sustainable seafood to people’s homes. They are offering a delicious Smoked Sablefish Chowder as their dish entry in this year’s festival

I made this delicious Smoked Sablefish Chowder which is ready made for reheating, each container features 4 servings! Chef Select Smoked Sablefish Chowder: their delicious chowder was originally created by former BC chef of the year and Culinary Team Canada member Chef Poyan Danesh for the 2021 Ocean Wise National Chowder Chowdown Festival. At 1931 Gallery Bistro that is located on the 2nd floor of the Vancouver Art Gallery is featuring a standout dish as their entry this year. It is a beautiful and delicious Salmon Risotto with Steelhead, Arborio, Cauliflower Puree, Edamame, Fennel Salad, and Fried Garlic. It is available daily for lunch as well as part of a prix fixe menu during dinner.
