Chef de Cuisine Kiran Kolathodan recently launched his new Summer menu at Rosewood Hotel Georgia. Lawrence joined me to try several dishes from this exciting new menu.
Charred Catalan Octopus
Herb pesto, pickled sweet chilli, summer beans, charred greens, a beautiful presentation, tender octopus and great flavours.
Shawarma, Pune nuts pomegranate, loved the addition of the edible flowers making for a pretty dish, matching the bursting flavours.
Torched Pacific Salmon
Chermoula dressing, grilled baguette, this addition of Moroccan dressing made for delicious flavoured fish.
Spring peas, lobster, mascarpone, herbs, loved everything about this dish that you won’t want to share with others.
BC Wild Halibut
Harissa, polenta, Kale, herb Oil, loved the plating as well as the addition of the harissa on the side, the polenta was light made into a foam.
Semolina sponge, orange blossom, lemon curd, pine nut crumble
Almond Panna Cotta
Valhrona almond inspiration, almond brittle, strawberries, my favourite of the two desserts, delicious all around.
I loved the Mediterranean theme of this years summer menu, Chef Kiran is very creative and talented with incorporating flavours into his dishes and the plating is beautiful as well.
