I was invited in to try Executive Chef Phil Scarfone new fall and winter menu which offers up seasonally changing innovative dishes using as much local ingredients as possible.
1st dish:
Russian kale salad, roasted sunchoke, pomegranate, hazelnut vinaigrette, loved the crunch as well as the tasty dressing and bolstering red pomegranate.
2nd dish:
Baked sweet potato, jalapeño, bacon, crème fraîche, scallion, fully loaded and yum!
3rd dish:
Squash tortelloni, sage butter, pumpkin seed, goat gouda, and outstanding delicious dish.
4th dish:
Oven roasted cauliflower, sunflower seed, green harissa
5th dish:
Roasted delicata squash, walla walla onion, macedonian feta, sage, making for wonderful flavours in this fall dish.
6th dish:
Cavatelli, braised venison, wild mushroom, kale salsa verde, parmesan; outstanding flavours and one of my favourite dishes of the night.
7th dish:
Warm apple crostata, bourbon, raisin, cinnamon ice cream
8th dish:
Pumpkin spice ice cream sandwich, macerated cranberry, ginger snap cookie
