This past summer Executive Chef Darren Brown and his team at the Fairmont Pacific Rim Hotel added a gourmet food market inside their Giovane Café called “The Market”. This internationally inspired gourmet market takes foodies on a culinary journey, sourcing the finest handcrafted products from British Columbia, Italy and around the world.
Chef Darren Brown gave me a tour of his olive oil collection and a tasting of many of the different olive oil from Italy’s finest growers and producers, a few that I tried were from Domenica Fiore a local company owned by Frank Giustra. They feature an olive oik table that features a rotating display of olive oil’s for customers to taste, give it awhirl the next time you are in the market and find yourself some new olive oils!
For the dinner party guest, selecting the perfect host or hostess gift is easy thanks to a collection of exclusive gifts and novelty items that will adorn the dinner table or put the finishing touch on a fabulous meal. Catering to a sophisticated palate, groups linger over family-style sharing platters at the newly appointed communal table, cooking devotees gather high-end ingredients featured in the market’s ‘recipe of the week’. Guests wishing to take the fuss out of planning a dinner party are encouraged to ‘fake it so you don’t have to make it’ – where Chef Brown creates the dinner party to go, outfitted with all the makings of a divine meal. When the sun is shining, the market is the place to fill a basket before wandering the park in search of the perfect picnic spot; meanwhile, those planning to dine at 30,000 feet will adore ‘meals on the fly’, a first-class alternative to the boring brown-bag lunch.
