I have eaten a lot of dishes inside and outside Vancouver restaurants in the past year, these are dishes that are standouts, ones that you remember for a long time to come. This list is devoted to my favourite dishes that I have eaten in 2020 at restaurants that are still open to this day.

A Summer at Orto
it was such a glorious salad with fresh and flavourful ingredients from the garden and the local farms and a great memory to savour! The salad was made with Prawns, cold ratatouille and tomato salad, olive oil, lemon juice, harissa dressing.

Chili Roasted Chicken
Rau Ram (aka Vietnamese Coriander) the spice on the outside of the chicken, they also use it on some of the other meat dishes (from Vietnam). the chicken is marinated for 48 hours then sous vide, making for delicious and flavourful chicken.

Smoked Veal & Tuna
is a play on the traditional Italian Vitell Tonne; where the fusion is wonderous, the veal is smoked to give it a barbq taste while the rest of the ingredients tuna & anchovy dressing, salsa verde, caper berries, pecorino fresco, celery; one of my favourite dishes on their menu.

Glorious Pickled Beets
served with burrata cheese and meadowsweet tahini dressing

Pan roasted B.C. halibut was one of the star dishes with farro verde, roasted lemon, cauliflower, crispy greens, dandelion.

a standout with caramelized sweet onion, guangiale, balsamic reduction & rosemary.
412 6th Street, New Westminster
Pan Roasted Halibut
lemon, capers, homemade gnocchi, brown butter foam, this was a stunning dish and perfect for summer.

a unique dish that I never had before until now, Crispy potato shells stuffed with cottage cheese, marinated with spices and cooked in the clay oven and I loved it

Stuffed Eggplant Plate
a delicious plantbased Middle Eastern dish with hummus, tahini, potatoes and pita.

Khao Piak Taro Scallops Curry
a delicious Thai prawn curry sauce and grilled scallops; served with aromatic deep fried herbs and fresh vegetables.

Cardamom Confit Duck Tagine
a delicious Moroccan dish with Halal Hormone free non medicated duck confit, Braised in duck consommé, with pear, carrots, figs, dates, sesame duck cracklings. served with freekeh.

Sous-Vide Cream Chicken
topped with garlic chips tender and flavourful chicken, bite after bite I wanted to eat more.
