I have eaten a lot of dishes inside and outside Vancouver restaurants in the past year, these are dishes that are standouts, ones that you remember for a long time to come. This list is devoted to my favourite dishes that I have eaten in 2021 at restaurants that are still open to this day.

Roasted Coho Salmon
Loved the Roasted Coho Salmon with Bulgur and Barberries, the coho salmon was crusted with sesame, served on a bed of preserved lemon and dill sauce served with a side of warm bulgur and barberries; it was flavourful and memorable.
Braised Lamb Gnocchi, a creative and delicious dish by Chef Will Lew with heirloom winter squash from the Versante Hotel owner’s farm on Cortez Island, along with whipped mascarpone, charred shallots, sunchoke chips and mint gremolata.
A delicious French classic vegetarian dish, mushrooms in puff pastry, by Chef Albert Tran, wow.
with tomato rice pilaf in a roasted red pepper sauce served with grilled Turkish bread by Chef Derek Ingram; outstanding flavours all around.
This was a stunner, locally grown carrots and a few different varieties this is the Roasted Carrots with a delicious roasted carrot purée, chive, breadcrumbs dish by Chef Stuart Ehrecke.
Potato gnocchi with first of the season Klippers Organic tomatoes that were picked from the farm that day, whipped ricotta; you could just taste the freshness of the tomatoes that were grown metres away from the restaurant.
What a stunning dish! Poached halibut with artichoke barigoule and a preserved tomato broth by chef Gus Stieffenhofer-Brandson.
with a Cream Sauce base, Fior di Latte, Pecorino Romano, Black Pepper, EVO, Maldon flaked Salt and it’s incredible.
Yellow Curry Prawn Chowder
with crispy shallots, lime cream, chili oil, coconut, lemongrass, and house made grilled sourdough a delicious and beautiful chowder recipe created by chef Jesse Hochhausen.
The sun’s shining glow on the outstanding Eggplant cappellacci stuffed with eggplant and scamorza cheese in a tomato sauce by chef Greg Dilabio.
Beautiful Puglia Burrata dish with basil pesto, and marcona almonds.to start our delicious dinner at this Italian gem in Fraserhood.
Triangle shaped Afghani flatbread stuffed with potato and spices, served with chutneys and one of my favourite dishes of the dinner.
