I had a chance to taste the new Oceanwise menu that was created to launch Vancouver Fish Co partnership with the Vancouver Aquarium’s Ocean Wise program. As their restaurant’s mission is to serve only the freshest and sustainably sourced seafood, they are thrilled to finally be part of a fantastic organization whose main goal is to ensure the health of our oceans for generations to come. To celebrate, the restaurant is presenting a special Ocean Wise Festival menu, available March 22 – April 30.
This special menu created by Chef John McManus features 5 seafood oriented courses that are sure to wow your palate and senses.
1st course:
Haidacore Tuna Tacos lime-marinated tuna, chipotle slaw, avocado crema
2nd course:
Sockeye Salmon Tartare preserved lemon, capers, dijon, parsley, egg, crostini
3rd course:
Maple Walnut Prawns lightly fried VFC tempura prawns, maple, spiced walnuts, toasted sesame
4th course:
Salish Sea Boil medley of clams, mussels, Dungeness crab, Hannah Brook Farms vegetables, grilled bread, clarified butter
5th course:
Manila Clam Smoked Sablefish Vongole smoked sablefish, fresh clams, smoked bacon olive oil, white wine, roasted tomato, garlic confit, fresh basil
