On November 28th, I attended Dine Italia featuring a special menu created by Chef Romy Prasad at Federicos, paired with wines from Italy.
This dinner was the last dinner that the Italian Chamber of Commerce in Vancouver hosted in November to celebrate food and wine from five regions around Italy.
During the reception they served Porcini Mushrooms on croistini with fresh herbs, demi-glace and Montasio cheese that was paired with Di Lenardo Pinot Grigio.
Now on to dinner and the pairings!
First Course:
Zuppa di Fagioli
Borlotti beans, rainbow swiss chard, tomato and prosciutto
Paired with Friulana Villa Rubini 2009
Second Course:
Risotto di Cinghiale
Risotto with wild boar braised with cinnamon and black pepper
Paired with Chianti Fattoria Luiano 2008
Third Course:
Brasato di Manzo
Slow cooked aged boneless beef short rib, red wine, root vegetables, fresh herb gremolata, tomato, served with gorgonzola polenta
Paired with Frescobaldi Tenuta di Castigllioni 2008
Fourth Course:
Piatto di Formaggi
Asiago and Piave Cheese plate with truffled honey
Paired with Masi Amarone 2007
Fifth Course:
Uva ghiacciata e tartufi di cioccolato
Frozen grapes and chocolate truffles
Paired with Alexander Grappa
Comments: All of the wines and courses were well paired. My favourite dishes was the Risotto di Cinghiale paired with the Chianti Fattoria Luiano 2008 and the Slow cooked aged boneless beef short rib, red wine, root vegetables, fresh herb gremolata, tomato, served with gorgonzola polenta, paired with Frescobaldi Tenuta di Castigllioni 2008. Following the dinner the house band played and guests packed the dance floor.
