Little Devils Wood Fire Food Truck

Duck & Double Basil

Price: $18.88

Created by: Quentin Kayne and the Little Devils Team

Description: On spring break we went to the Vancouver Museum and that got us thinking about food and what story we wanted to tell.  First, a delicious one.

Second, take advantage of the world of flavour and techniques literally on our doorstep!

We start off with a garlic cream base, then top with  duck confit cured and sous vide cooked. It’s a simple recipe with big flavours. The duck confit needed a big, long, sweet dance partner… and Hoisin was it. Coming back to the creamy mouthfeel of Fior di Latte and then Basil two ways, crisped and fragrant in the oven and then added fresh to finish. And hey, what’s a pizza without EVOO and grand padano?

Ingredients: Garlic & Olive Oil Base, Duck Confit, Hoisin sauce, Double Basil (added before and after the cook), Rosemary, Fior di Latte, Parmesan, Extra Virgin Olive Oil

Offered: Available for pickup anywhere the truck is (check the website). Delivery available through Uber Eats, Doordash and Fantuan when we are in the River District!
