Julia Diakow is a bartender at Cuchillo in Railtown as well as a Bartender at Reflections in the Rosewood Hotel Georgia. By day she is the Sales and Marketing Manager for Sovereign Wine and Spirits Ltd.
I asked Julia to make a selection of her more unique cocktails at Cuchillo.
Up first is Au bon vieux temps
Au bon vieux temps
Inspired by her week in Belgium and named for her favourite bar in Brussels.
Ingredients:
30 ml Bols Genever
15 ml Lemon juice
15 ml Honey Apricot Anise syrup
Leffe Blonde beer
Method:
1) Combine all ingredients (except for the Leffe beer) into a shaker tin and shake over ice
2) Strain into a champagne flute and top with Leffe beer
3) Garnish with lemon twist and anise
The next cocktail she made was the Sola de Vega
Sola de Vega
Inspired by the agave fields of Oaxaca
Ingredients:
30 ml Siete Misterios Espadin Mezcal
15 ml PX Sherry
10 ml Banana syrup
3 dashes Scrappy’s Orange bitters
1 dash of vanilla salt
Method:
1) Combine all ingredients and stir over ice
2) Strain into chilled coupe glass
3) Garnish with lime twist
For her 3rd cocktail she made a Luchador’s Flip
Luchador’s Flip
Inspired by Cuchillo and the winter seasos
Ingredients:
45 ml Centinela Reposado Tequila
15 ml Becherovka
15 ml Ancho Chili syrup
1 full egg
20 ml Horchata
3 dashes of Scrappy’s Chocolate bitters
Method:
1) Combine all ingredients and dry shake
2) Shake once again over ice
3) Fine strain into a Flip glass
4) Garnish with a dash of nutmeg
