On Thursday, October 27th, I attended a wonderful dinner at the Vancouver Club, which raised $70,000 for Dan’s Legacy. The charity provides therapeutic counselling and life-skills programs for youth survivors of trauma and abuse.
Hosted by Fred Lee, guests enjoyed an elegant meal, with wine pairings, created by five of Vancouver’s top chefs, along with wonderful music by Vancouver’s Max Zipursky Jazz trio.
Hubbard Squash Velouté with spaghetti squash ‘carbonara’ , truffle pecorino, shaved alba truffle; a stunning dish by the Vancouver Club’s Executive Chef Sean Cousins. Paired with the 2014 Tinel-Blondelet Pouilly Fume, Loire, France.
Raw Pacific Scallop on the half shell by Chef Lee Cooper of L’Abattoir, a dish with beautiful flavours. Paired with the 2014 Culmina Unicus Gruner Veltliner, from Oliver, BC.
Cabbage Steamed Oysters with fermented gooseberries by Chef David Gunawan of Farmer’s Apprentice, a stunning dish with incredible flavours. Paired with the Garnier & Fils Chablis, Bourgogne, France.
Grilled Veal Tenderloin with porcini, leek and braised veal tortellini by Chef Stefan Hartmann of The Bauhaus Restaurant, an impressive dish and an outstanding pairing with the 2010 Chateau Lamourche-Bergeron, haut Medoc (France).
Mocha Hazelnut Mille Feuille By Pastry Chef Jessica Caparas of the Vancouver Club for a delicious finish. Paired with the 2008 Black Sage vineyards.
In response to the need for more beds, and knowing many youth require more counselling support in addition to Dan’s Legacy’s four-month intensive programs, the charity also unveiled its plans to build a 10-bed Recovery Centre on an organic farm in the Lower Mainland. Clients will opt-in for a one-year term and receive counselling, life and work-skills instruction, and educational programs. Intern architects Kaitlin Wierstra and Andrew Carruthers created the artists’ concept, much to the delight and interest of the gala guests. Learn more about Dan’s Legacy here.
The Chefs’ Charity Dinner has grown significantly since 2015, when 60 guests helped raise $23,000 for Dan’s Legacy. Next year’s gala, the 4th Annual Chefs’ Charity Dinner, is slated for Thursday, November 16th, 2017 at the Vancouver Club.
