Last week I had a chance to taste some of the new chocolates in the Valrhona line of chocolate products alongside many of the city’s invited pastry chefs and chocolatiers.
Pastry Chef Kira Desmond and her team created some sweet indulgences for guests to savour during the reception that featured Valhrona’s Dulcey Blond chocolate.
Since 1922, French chocolate maker Valrhona has never believed in standing still when it comes to innovating by chefs and for chefs. Going beyond the standard, offering new products for chefs to add to their culinary tool chests, Valrhona has once again created Dulcey blond chocolate couverture. The new Dulcey couverture clearly distinguishes itself from roasted white chocolate due to its unique composition, production process and flavor profile. With its delicately sweet taste that marries intense biscuit flavors with a pinch of salt, a creamy texture, hints of caramelized milk, and unique blond color, Dulcey offers chefs and chocolatiers brand new tools to continue to push their creative boundaries and please customers.
Secret Location can be found at One Water Street in Gastown where Pastry Chef Kira Desmond is the star of the pastry kitchen, she is one twitter @SwtProvocateur
