Curried Cauliflower Pizza by @chefandhisgrowler th Curried Cauliflower Pizza by @chefandhisgrowler their house-made crust @backcountrybrewing with a red curry coconut base, topped with roasted curry cauliflower, roasted peppers and mozzarella. Garnished with cilantro chutney, mango creme, toasted coconut and house made paneer. A flavourful, creative pizza in the #pizzachallengeyvr on now through to April 25; try this daily on their patio (check hours) or for takeout.
I made these delicious Healthy Oat Chocolate Chip I made these delicious Healthy Oat Chocolate Chip Cookies which uses @quakercanada oat flour. 

This recipe features the wholesome goodness of 100% whole grain oats. A single serving of Quaker Oat Flour offers a source of fibre, contains no artificial flavours or colours and is non-GMO project verified.  Made in Canada, Quaker Oat Flour is now available in the baking aisle of local grocery stores from coast to coast.

INGREDIENTS:

2/3 cup plus 1/2 cup oat flour (140g)

1/4 tsp salt

1/2 tsp baking soda

4 tbsp brown sugar

4 tbsp regular sugar

1/2 cup chocolate chips

1 tsp pure vanilla extract

2 tbsp vegetable oil

3-5 tbsp milk of choice, as needed

 

INSTRUCTIONS:

Preheat the oven to 380 degrees. Combine dry ingredients and mix very well. Add wet ingredients, and form into a big ball. Now make little balls from the big one.

For soft cookies, refrigerate until cold (otherwise, just bake right away).

Bake for 9 minutes. Remove from the oven when they’re still a little undercooked, then it’s important to let cool 10 minutes before removing from the tray, as they’ll continue to cook while cooling. They should have spread out, but every now and then they might not (climate plays a huge role in baking), so just smush down with a spoon if needed. For softer cookies, store in a lidded plastic container. For crispier cookies, store in a lidded glass container.

Cook Time: 9 minutes

Total Time: 19 minutes

Yield: 14 – 18 cookies

a stew with hominy corn spiced with huajillo chiles, oregano and onions. Topped with lettuce, diced onion, radish, lime and a hint of oregano on the side.

2) Tamales - Corn-based masa/dough wrapped around a filling and steamed in a corn husk (each about 120 grams). My favourite of the two we tried was the Chicken in Mole sauce.

3) Frijoles Puercos are made with refried pinto beans, jalapeños, bacon and chorizo

4) Beef Tacos with spanish rice, on a flour tortilla, topped with guacamole. 

 

5) Conchas (aka Mexican sweet bread) made of a fluffy, butter brioche-like dough topped with a streusel topping that is scored like a #Concha (Shell in Spanish). Box of 4 - Half and Half (vanilla and chocolate)

6) Tres leches cake - This soft ultra-light sponge cake is soaked in a sweet milk mixture and topped with freshly made whipped cream.

7) Arroz Con Leche (aka Mexican Rice Pudding) a sweet rice pudding cooked with milk, evaporated milk, sweetened condensed milk and topped with cinnamon.

Conchas @bajasfoodcom aka Mexican Sweet bread, I’ve been eating these for years both locally and in my travels; these are so good, brioche-like, fluffy, soft and yum!
La Ligure Nera @sciuevancouver this pizza was crea La Ligure Nera @sciuevancouver this pizza was created by Chef Filippo Musso @fmusso94 and features an activated charcoal base topped with a creamy pesto sauce, Shredded mozzarella cheese, roasted potatoes, green beans garnished with pesto and fresh basil for the #pizzachallengeyvr on now through to April 25; try this daily on their patio or for takeout. 

This creation is Chef Filippo's tribute to his homeland Liguria as Ligure means person from Liguria, Italian region well known for the stunning Cinque Terre Nation Park. He combined traditional ingredients such as pesto, roasted potatoes, green beans and added a twist in the base that looks like it’s burnt but isn’t not, so not to worry!
Drunken Onion Prosciutto Pizza @wildeyebrewing pai Drunken Onion Prosciutto Pizza @wildeyebrewing paired up with a flight of their tasty beer; this creative and delicious pizza by Chef Erica Pandan features a mornay base topped with crispy prosciutto garlic confit, roasted white mushrooms, white onions caramelized with Wildeye Czech Dark Lager, and smoked caciocavallo cheese. Finished with sliced pepperoncini peppers and fresh basil for the #pizzachallengeyvr on now through to April 25; try this daily on their patio or for takeout.
