Mark Medalla, Managing Partner told me; Pizzas are baked in an 800-degree gas oven for 90 seconds.

Firecrust pizza honors the tradition of Neapolitan pizza as it was created in Naples, Italy. A customer can create their own pizza by choosing from Firecrust’s premium products and toppings along its granite pizza line. Firecrust uses only the freshest Mozzarella and a tomato sauce recipe using San Marzano tomatoes that are grown in the Campania region of Italy. The pizza dough is made using only Caputo type “00 flour, which produces a soft flavorful crust.

In addition to the authentic Neapolitan pizzas, they also offer a selection of salads, calzones, soups and a Mercado that sells the flour, tomato sauce and other ingredients. Build your own pizza for $10.95, add any of the toppings, only extra charge would be if you added prosciutto (an extra $3).

I tried a few pizzas, including the Margherita Pizza, along with the Quattro Formaggi Pizza; and a Build your own Pizza which I had with pesto, sundried tomatoes, fior di latte, chicken and caramelized onions.

I also tried one of their dessert calzones, the S’mores Calzone that features Nutella and marshmallow.

Firecrust Neapolitan Pizzeria is located 808 Davie Street in downtown Vancouver. You can follow them on twitter @Firecrustpizza and on Instagram: @firecrustdavie
