Radiant Radicchios under a Frost Moon Tasting Menu at Burdock and Co.

The tasting menu at Burdock and Co. is an experience like no other, and earlier in the fall we experienced their ‘Radiant Radicchios under a Frost Moon’ Tasting menu that celebrates Radicchios and the many varieties that is grown for them by Glorious Organics farm.

We started off with a couple of snacks which were an additional price and one of those also featured Radicchio; the savoury éclairs were filled with garlic grilled radicchios, goat camembert and apple butter and this was delicious.

It was then on to the multiple courses:

1st course:

Gallo di Verona Radicchio
Confit scallop, celeriac, Salt Spring Island citrus kosho, local ginger and plum sauce
We added the Acadian caviar (an additional charge) which was divine.


2nd course:

Sugar Loaf Chicory
Green farro risotto, chicory and lacto fermented potato mousse, radicchio saurkraut

3rd course:

Rossa di Treviso Radicchio
Prosciutto and onion confit, Kabritt cheese, black garlic soubise

4th course:

Rossa di Verona Radicchio
Gindara sablefish, radicchio crepe with lemon verbena butter


5th course: This was an add-on (for additional price) and this Japanese Miyazaki A5 striploin, wagyu fat confit hakurei turnip, kimchi glaze was outstanding.

6th course:


Variegata di Castelfranco Radicchio
Mango sorbet, candied radicchio, almond

7th course:

Rossa di Chioggia Radicchio
Ricotta gelato, plum kernel hazelnut cake, radicchio jam, radicchio and stone fruit leather

8th course:

Chicory Root
Macaron of porcini, chicory root

To round out the experience there are various beverage pairing options from an extensive wine selection as well cocktails to the one that we had which was their Zero-Proof offering of beautiful wines and mocktails.
