
The start of a new school year calls for quick, no-fuss meals, and a Hamilton Beach toaster oven can be the secret sidekick that keeps breakfasts, lunches, and after-school snacks both easy and delicious.

When the college students or high school aged kids are looking for something quick and easy to make for dinner, a pizza often comes to mind and I decided to make one that is more healthy than most.


Started off with a Cauliflower Crust Pizza Kit that I picked up at Costco which came with the tomato sauce. I covered the pizza crust with the sauce and added some local roasted corn (microwaved the corn on the cob), along with some oven-roasted local zucchini, and then added a good sprinkling of 3 different cheeses. As the crust was fairly large I had to cut I up into quarters but could cut it into thirds if need be. I then put it in the toaster oven and baked it according to the instructions in the Hamilton Beach manual.
