Oaxacan Cooking Class in Oaxaca

I participated in a wonderful Oaxacan Cooking Class while in Oaxaca, Mexico recently that was led by chef Mimi with assistance from her son Charlie at their Maiz Cocina Tradicional cooking school.

Our group of 12 people were from all over the world and we learned how to make a selection of classic dishes from scratch using traditional methods that included salsa, corn tortillas, mole negro, and fava bean soup.

We all sat together and enjoyed eating our Mexican dishes along with some refreshing hibiscus water which made for a wonderful meal. They served us the mole negro over chicken and rice and a delicious chocolate cake flan for dessert.

The was a memorable experience during my visit to Oaxaca.
