These olives have been a staple in Californian kitchens for over a century, known for their consistent quality, buttery texture, and mild, versatile flavour. Now that they’ve made their way north of the border, I couldn’t wait to get my hands on a pack and start cooking.
And let me tell you—they did not disappoint.
To celebrate their Canadian debut, I created two easy, flavour-packed recipes that show just how versatile California Ripe Olives can be. Whether you’re preparing a weekday dinner or hosting friends on the weekend, these dishes bring brightness, colour, and sunshine-state flavour to your table.

Salmon and Olives
Ingredients
1 pint cherry tomatoes, halved
¼ cup black California Ripe olives, quartered
2 tablespoons extra-virgin olive oil, divided
4 teaspoons minced garlic
1 tablespoon chopped fresh thyme (optional)
½ teaspoon ground pepper, divided
2 salmon fillets
Directions
1. Preheat oven to 400 degrees F.
2. Stir tomatoes, olives, 1 tablespoon oil, garlic, thyme (optional), and 1/4 teaspoon pepper together in a medium bowl. Spread the mixture on half of a large rimmed sheet pan.
3. Brush the remaining 1 tablespoon oil all over the salmon pieces; sprinkle with the remaining pepper. Place on the empty side of the sheet pan.
4. Bake until the tomatoes have broken down and the salmon is just cooked through, 12 to 15 minutes.
5. Serve the tomato mixture on the side of the salmon or on top if you prefer.

Tofu with olives and lemon
Ingredients
1 block extra firm tofu
¼ cup Green California Ripe olives, halved
2 lemons, sliced and segments
Dash of onion powder
Dash of black pepper
Two dashes of smoked paprika
2 tablespoons olive oil
Directions
1. Preheat oven to 400 degrees F.
2. Cut tofu into 1 inch cubes into a medium bowl, add the olive oil, the spices, the lemons and the olives and mix so all the tofu is coated. Spread the mixture on half of a large rimmed sheet pan. Bake for 25-30 minutes.
