In Vacanza (on vacation) made perfect sense when owner Eryn MacKenzie was travelling around Italy with her boyfriend James pre-covid. As they were eating delicious pastas throughout their travels, she got the idea to open an Italian pasta focused food truck. As she wanted to have the food truck be based in North Vancouver, current laws prevented a mobile permit so she ended up setting up shop so to speak in the loading bay of Woods Spirits between them and Sons of Vancouver distillery.

It’s turned out to be the perfect accompaniment for both distillers as they now have a food component for guests to enjoy when sipping on cocktails on their respective patios. They make all their own pasta from scratch as well as most other dishes. In addition to their salads, cooked pastas and other dishes, they now offer fresh pasta to go that people can cook at home.

I visited and enjoyed some dishes recently.

The Wilds Salad – an outstanding salad with Black Locust Flowers; Wild Watercress; Local Spinach; Limoncello, White Balsamic, Olive Oil and Mint Dressing with Rocket Flower and Snap Peas.

Caprese Insalata with a touch of olive oil imported from Italy making for a tasty dish of fior di latte, tomatoes and basil.

Prosciutto di Parma (18 months aged) and Burrata with baguette slices making for a delicious dish to share.

Amatriciana – classic dish featuring bucatini noodles, san marzano tomato, chili and smoked pork jowl.

Pesto Liguria – this was outstanding with a delicious pesto sauce, linguine, green beans and potato

Cacio e Pepe – tasty dish that is traditionally made with pecorino romano and cracked pepper.

Limoncello cream with blistered shishitos and fettuccine, another amazing dish, made with the Woods Spirits Limonello liquer and was the special of the week.

Cannoli – the only dish not made in house, the handmade cannoli shell filled with chocolate studded ricotta, incing sugar, toasted nuts and it is divine.

I can’t wait to return to enjoy some more of their delicious pastas. I love finding hidden gems and this is one of those places.
