Vancouver Aquarium’s Toast to the Coast October 22

Fill your bellies and your closet at the Vancouver Aquarium’s Toast to the Coast, Friday, October 22, from 7:30 – 10:30 p.m. Enjoy good food, great wine, and local entertainment including a live DJ and fashion show all in support of direct action programs at the Vancouver Aquarium.

We’ve expanded the space, meaning this year we can welcome 500 lovers of food and wine to experience the magical backdrop of the Aquarium at night. From black-tie to tie-dye, this is one of those special nights where demographics merge to celebrate great wine, fine food—and most important—the greater social conscience that has made Toast to the Coast one of the Aquarium’s top fundraising events in support of its conservation and education programs.

Night at the Aquarium

Last Friday June 12th I attended The Vancouver Aquarium’s 4th annual Night at the Aquarium gala fundraiser that raised over $300,000.

Night at the Aquarium is Vancouver Aquarium’s signature gala and has quickly become one of Vancouver’s “must attend” fundraising events. Hosted by the non-profit and self-supporting Vancouver Aquarium, 100 per cent of proceeds go directly toward supporting the Aquarium’s numerous education and research initiatives as well as direct-action conservation programs.

“Night at the Aquarium is an evening where members of our community come together to support the Aquarium’s mission of conserving aquatic life,” said Dr. John Nightingale, President, Vancouver Aquarium. “We are extremely grateful to our sponsors and guests for their generosity to help advance our education, research and conservation efforts.”

Over 550 guests were welcomed at this year’s gala, and were delighted by innovative dishes created by Vancouver’s beloved Ocean Wise™ restaurants. Ocean Wise is Canada’s leading sustainable seafood program and one example of the Aquarium’s conservation initiatives. Executive chefs from C Restaurant, Blue Water Café + Raw Bar, Hapa Izakaya, Coast, Diva at the Met and Oru donated their time to treat guests with a range of creative dishes.

Divine dishes included Ocean Wise Dungeness Crab Leg with Elderflower Sabayon and Cucumber Gelee, created by Bishop’s executive chef Andrea Carlson, and Argentinean Chimmichurri Lamb Lollipops prepared fresh throughout the evening by Vancouver Aquarium executive chef Myke Shaw.

The silent and live auction created generous competition among gala attendees. Items ranged from exclusive travel excursions to a private tasting hosted by Canada’s own Iron Chef Rob Feenie.

Night at the Aquarium continues the fund-raising event tradition started in 1994 by Salmonchanted Evening in support of the Aquarium’s research, conservation and education programs.

My friend Ed and I enjoyed the food especially the dishes created by Bishop’s, Blue Water Cafe, C5, The Observatory, Coast, Le Gavroche, Vancouver Aquarium and Rocky Mtn Pizza. The evening ended off on a sweet note with delicious ice cream sandwiches made on the spot by the Pacific Institute of Culinary Arts team.

Ocean Wise Mystery Tour

I was invited to take part in the amazing Ocean Wise Mystery Tour on January 21st , a unique event to celebrate 5 years of the Ocean Wise program. The event was kicked off with a champagne reception at the Vancouver Aquarium where we made a toast to the 5th year anniversary for Ocean Wise and their achievements.

The “Ocean Wise Turns 5” Media Dine-Around was very well organized with 6 groups of media along with an Ocean Wise representative sent around on buses to a couple of restaurants that were Ocean Wise certified around the city. Bus transportation was courtesy complimentary from Landsea Tours (sustainable transportation).and they took care of us during the evening. We all attempted to guess on which restaurants we were being taken too. The surprises were well worth the intrigue and mystery. I learned some new things about the Ocean Wise program and why it is such a great model for consumers as well as the suppliers and restaurants.

My group was fortunate to have Dr John Nightingale as our leader for the evening, this gave me a chance to talk to John who is the President & CEO of the Vancouver Aquarium and to learn a lot about their Ocean Wise program. We also were lucky to have Chhaya Jagpal the Marketing & Promotions Manager of the Vancouver Aquarium with us. Our first destination unknown turned out to be to the Rocky Mountain Flatbread Co in Lynn Valley in North Vancouver. I hadn’t been to this location and was pleasantly surprised on how large the restaurant was and to the extent of their participation in Ocean Wise. Here we were fortunate to be able to dine with Dominic Fielden, President of Rocky Mountain Flatbread Co and to here first hand about his experiences being a part and supporter of Ocean Wise. We had an enjoyable tasting menu here that included 3 courses and pairings.

Fresh Baby Shrimp Bruschetta – warm slices of garlic brushed organic bread with fresh baby shrimp and diced marinated local tomatoes, fresh cilantro and asiago. This was paired with beer – the Howe Sound Three Beavers, Imperial Red Ale.

B.C. Pasta Special – hand cut organic pasta with garlic seared Qualicum scallops, yellow onions, portabello mushrooms, roasted B.C. beets & butternut squash in a lemon, white bear wine cream sauce & topped with crumbled goat’s cheese and chopped arugula. This was paired with a B.C. wine – White Bear, Sauvignon Blanc.

Ocean Wise Flatbread Pizza – organic handcrafted flatbread brushed with garlic oil and based with organic tomato sauce & mozzarella cheese. Topped with in-house orange maple cured wild salmon and fresh shrimp, artichokes, red onion, nut free herb pesto & asiago cheese. This was paired with a B.C. wine – Larch Hills Winery, Gewurztraminer, Organic.

Back on the bus we all went onto the second stop on the tour destination unknown, all we new was that we were going higher in elevation. Down the highway we went and up the mountain arriving at a wonderful restaurant that is owned by well known Chef Wayne Martin at Fraiche Restaurant. Here we were treated to a menu prepared by Shaun Snelling Chef de Cuisine.

These 2 dishes were paired with a French wine – Chateau Guiraud, 2007, Bordeaux Blanc, France.

Back on the bus we were headed for C Restaurant our last stop of the evening to rendezvous with everyone at the founding restaurant partner of the Ocean Wise program. Here we were hosted by Chef Robert Clark at C and were treated to a wonderful plated dish.

Smoked Baynes Sound Scallop – Denman island herring “escabeche” peashoots in multiple textures, compressed cucumbers, shallot vinaigrette. This was paired very well with a wine from Germany – Selbach-Oster, Reisling, Zeltinger Sonnenuhr, 1998.

Salt Spring Island Goat Cheese and Vanilla Mousse – sapo bravo stone fruits, spiced liquid marshmallow.

These 2 dishes were paired with 2 BC dessert wines and both very good and very different.

Forbidden Fruit Winery – “iced apple dessert wine” Similkameen Valley, B.C., 2007 and the

Vista d’oro Winery – fortified port style wine with Walnut brandy, Langley, B.C., 2007.

On our tour the rest of the dine-around groups spent their evening prior at these other fabulous restaurants who worked so hard to treat us all so well: Aria Restaurant – Westin Downtown, Burrard Bridge Marine Bar and Grill, Revel Room, The District, The Edge Bistro, Griffins – Fairmont Hotel Vancouver; Tapenade Bistro and Zen Japanese Restaurant.

Ocean Wise Seafood Chowder Chowdown

The 2nd Annual Ocean Wise Seafood Chowder Chowdown was a huge success at a great event hosted by the Vancouver Aquarium on November 25th. This sold out event saw hundreds of people sampling many or all of the ten chowders from BC’s top ten Ocean Wise restaurants from around the city and area, many of the chowders were paired with BC brews and the suggested beers were listed along each of the restaurants chowders.

Go Fish won Gold with their “Smoked Corn and Scallop Chowder”, Matt and his brother Andrew had cooked up a storm that night with a constant line-up of people who eagerly awaited the fresh seared scallops to top the chowder, this was a sight to be seen and it was worth the wait which I can attest too. The Refinery won Silver with their “Smoked Cod and Crab Chowder” by Chef Mike Carter and his team and Coast Restaurant won Bronze with their “BC Sea Urchin and Smoked Pacific Oyster Chowder” by Executive Chef Josh Wolfe and his team.

The Judging panel included: Jamie Maw, Chef David Hawksworth, Chester Carey, Guy Dean, Kim Stockburn and Vancouver Canucks Willie Mitchell. Each of the judges were served a fairly good size portion of each of the chowders to taste and make their marks and notes.

Everyone who attended was able to cast their vote for their favourite chowder for the People’s Choice Award and the winner was O’Douls.

The winning chowder from Go Fish was well paired with the Tree Brewing Cutthroat Pale Ale. In my opinion other beers that went over well included the Phillips Longboat Chocolate Porter and the Phillips Blue Buck.

I hope Go Fish will be adding Matt and Andrew’s Gold Winning Chowder to their menu, I can see another long line-up!
