Urban Farming at the Fairmont Waterfront Hotel

I visited the Fairmont Waterfront Hotel recently and talked with Executive Chef Dana Hauser about their rooftop garden and about her plans for the garden. This hotel is leading the way in Urban Farming on a hotel level in Vancouver, the garden has been up and running now for several years. This year will see the largest selection of fruits, vegetables and herbs grown in their garden. More than 60 varieties of herbs, edible blooms, fruits and vegetables are grown throughout the year, and provide savings of approximately $10,000 annually for The Fairmont Waterfront.

This spring/summer they are growing the following: Thyme, Rosemary, Bay Leaf, Lavender, Lettuce, Spinach, Garlic, Tomatoes, Basil, Apples, Carrots, Potatoes, Leeks, Onions, Chives, Kale, Swiss Chard, Figs, Chili Peppers, Grapes, Mint, Raspberries, Strawberries, Blueberries,and more.

Each year they plant something different and new as a trial, and this year Chef Hauser was speaking about trying to grow mushrooms in the spent grain from their beer…. An interesting experiment!

The Rooftop Garden is located at The Fairmont Waterfront, 900 Canada Place Way, Vancouver on the same floor as the outdoor swimming pool and is only accessible to hotel guests.

Afternoon Hive Tea at Herons

Afternoon Tea is an art and should be an extraordinary experience one that you will cherish. Vancouver has some wonderful places for you to indulge in an Afternoon Tea experience. Each of the places is unique in what they offer along with the type of service and selection of sandwiches, pastries and desserts. I am on a journey around the city to find these extraordinary places.

Here is the twentieth of many places that I have visited recently. Herons West Coast Kitchen is located in the Fairmont Waterfront Hotel, downtown Vancouver.

I was joined by my mother for their Afternoon Tea service for $26.95 per person. The Fairmont Waterfront is serving up a unique West Coast twist on a timeless tradition. I had the Earl Grey Tea and my mom had the English Breakfast Tea.

We were then served a smouldering glass filled with local artisanal cheeses,  paired with a honey infused rosemary apple chutney and crisps.

A cedar plank arrived to the table featuring a selection of honey delicacies which replaces the traditional three tier tray of sandwiches and scones.  This pastry board included Honey Almond Cakes, Garden Thyme Lemon Lollipops, and Bannock Bread Scones with seasonal sweets prepared in-house including whipped honey butter, and Honeycomb.

My thoughts –I loved the whole experience, it was so different from the traditional afternoon tea service, it represented the local area as well and featured the honey that is harvested by the hotel. The Afternoon ‘Hive’ Tea is a sweet alternative which caters to taste buds of all ages and showcases Pastry Chef Stephanie Greenslade and her team.

Pastry Chef, Stephanie Greenslade presented a selection of garden inspired sweets and treats and my favourites were the Honey Comb Ice Cream Cones , Lemon Thyme Drops, and  Macaron Ice Cream Sandwiches.

The reception took place in Herons West Coast Kitchen + Bar, at The Fairmont Waterfront and featured a great band for our listening pleasure to go along with the wonderful bites and delights.

The hospitality team at the hotel is comprised of Daniel Kaeflein, Director of Food & Beverage; Ian Pullan, General Manager; Dana Hauser, Executive Chef; Mark Wadsworth, Exec Sous Chef and Chris Nielson, Sous Chef.

Last week I did some sipping and savouring, tasting some of the Blasted Church wines that were paired up with an array of cheeses. I had a chance to talk to Bernie Hadley-Beauregard who designed the wine labels and Evelyn Campbell the Proprietor of Blasted Church.
