The holiday season is upon us and the chefs at TWG Tea Salon have paired up a wonderful menu of tea infused dishes using many of this season’s Christmas teas. Enjoyed a wonderful media dinner last night to try some of their festive dishes and treats.
Truffle Mushroom Soup with African ball tea
Fois Gras Escalope and New Zealand Lamb Loin drizzled with lamb jus accompanied by a potato and chestnut pancake, served with White Christmas Tea infused mustard seed pickles, cranberries coulis, and wilted clayote leaves.
Chestnut Mini Log Cake sponge layered with strawberry confit and Night of Noel tea infused Bavarian cream, glazed with chocolate, topped with gold leaf and a whole chestnut.
Sacher Chocolate and Hazelnut Dacquoise Mini Log Cake filled with Night of Noel tea infused cremeux praline ganache and mascarpone mousse, topped with mini vanilla cremeux Choux puff.
