New Menu, New Dishes at Cibo Trattoria

Chef de Cuisine Josh Gonneau, has launched a new menu filled with wonderful new dishes celebrating Italian cuisine.

1st dish:

Albacore Tuna Crudo

Albacore Tuna Crudo shaved fennel, pickled radish, orvieto olive oil wonderful flavours!

2nd dish:

Chitarra al pesto

Chitarra al pesto, stinging nettle pesto, spring vegetables, caramelized chêvre, bright dish.

 

3rd dish:

Saffron cavatelli

Saffron cavatelli, bay laurel braised rabbit, swiss chard, preserved tomatoes, cerignola olives, stracciatella delicious dish!

4th dish:

Haida Gwaii Lingcod

Haida Gwaii Lingcod, red lentil spice crusted, green pea risotto, pickled fennel and radish.

5th dish:

Grilled Flat Iron Steak

Grilled Flat Iron Steak blue clair, charred rapini, peperonata, horseradish bagna cauda, loved the flavours of the meat.

6th dish:

Organic creme fraiche Pannacotta

Organic creme fraiche Pannacotta with grappa poached Hanna brook farms rhubarb, amaretti  stunning and yummy!

7th dish”

Tiramisu ‘cibo’

Tiramisu ‘cibo’ Molten chocolate brownie, Marsala & espresso bitters.
