For this 23rd Greasy Spoon Diner they are welcoming Chef Mark Singson into the kitchen!
Mark Singson is the founder of FAM INC. Born in the Philippines, he grew up in Vancouver, exposed to cooking at a young age in his mom’s kitchen. He started his Vancouver culinary venture cooking in Cactus Club, Coast, The Oakwood, Boneta and the Fairmont Pacific Rim.
In 2014, he worked as a Chef in Australia with Chef de Partie at St Crispin and Vue du Monde respectively. Mark worked as Sous chef at Annalena restaurant in Kitsilano, which was nominated for Air Canada’s Best New Restaurant in 2015. After a year and a half, he decided to go his own way and started FAM which is a platform for the local culinary community to collaborate, learn and grow with each other. Mark continues to find unique spaces, create thoughtful dishes with fresh creativity, and deliver an original overall dining experience.
