With it’s focus on creative cocktails and small plates, partners William Johnson and Jeremy Pigeon have created a notable spot in this neighborhood which marries inventive dishes with cocktails to match.
I enjoyed the Sean Archer/Castor Troy cocktail with el Jimador blanco, Creme de casis de Dijon, lemon, lime, pineapple, black pepper, sea salt to start along with the house bread with a delicious broth for dipping. The Smoked Steelhead Puff Pastry, radishes, garlic scapes, dill mayo, horseradish is light and full of flavour.
Harry Stamper cocktail with Makers mark bourbon, Sauternes, noilly Pratt extra dry vermouth, Rosemary, pine nut bitters is fairly strong and paired well with the rich and delicious Chicken Broth Ravioli, green tomato, grilled fennel, pecorino Romano. The Fresh Goat Cheese, strawberries, wild rose honey on the lavash, wild flowers, herbs grown in their own restaurant garden mixing savory notes with a slight sweetness from the honey.
A fried Funnel Cake wrapped up the offerings the night I was in, desserts change often. Look for creative plates and excitement in the glass at this Eastside cocktail bar.
