Summer Menu Tasting at Edible Canada

Visited Edible Canada at the Market earlier in the summer to taste Executive Chef Tom Lee Summer menu.

1st Dish:

LOCAL ASPARAGUS SALAD

LOCAL ASPARAGUS SALAD arugula, watercress, radish, egg, Windset Farms tomatoes, walnut oil vinaigrette

2nd Dish:

TOGARASHI RICE CRACKER CRUSTED WILD ALBACORE TUNA

TOGARASHI RICE CRACKER CRUSTED WILD ALBACORE TUNA warm fingerling potatoes, peas, kale, wild mushrooms

3rd Dish:

CRISPY RICOTTA & PEA GNOCCHI

CRISPY RICOTTA & PEA GNOCCHI spring market vegetables

4th Dish:

LOIS LAKE STEELHEAD SALMON

LOIS LAKE STEELHEAD SALMON local Dungeness Crab croquette, wild salmon caviar, smoked tomato vinaigrette

5th Dish:

KASU & BIRCH SYRUP SABLEFISH

KASU & BIRCH SYRUP SABLEFISH fava beans, asparagus, peas, northern beans, Swiss chard

6th Dish:

CHOCOLATE INDULGENCE

CHOCOLATE INDULGENCE layers of chocolate ganache, chocolate cake, raspberry sauce, topped with local hazelnuts.

My take:

My favourite dish of the meal was the Lois Lake Steelhead Salmon with delicious smoked tomato vinaigrette, followed by the Crispy Ricotta & Pea Gnocchi which was full of local vegetables and so much natural flavour. The Togarashi Rice Cracker Crusted Wild Albacore Tuna was also very well done with the  warm fingerling potatoes, peas, kale, and wild mushrooms. For dessert the Chocolate Indulgence was delish its rich layers of chocolate ganache, chocolate cake, raspberry sauce, topped with local hazelnuts.
