Food of the Gods? or Confection? Health Food? or Candy? Did you know that cacao beans only grow within 20° of the equator? Or, like fine wine, different beans from different plantations have different flavour profiles?

Chocolate 101 participants will learn the many facets of chocolate, from the bean to the bar, and taste samples of different beans, origins, manufacturers, and percentages of cocoa.

Also, as we believe that chocolate goes with everything, you will taste some of the our bestselling blended bars, such as our Maple caramelized Bacon with Espresso, Lavender, Sea Salt & Triple Peppercorns, Sour Cherry with Chili, and more.

    My favourite chocolate dessert has to be chocolate fondue!! It’s like saying anything goes with black – anything goes with chocolate!

    It’s hard to pick just one. I love a good chocolate chip cookie made with chunks of really good dark chocolate topped with a few grains of fleur de sel. The caramel flavour of the brown sugar with the dark chocolate and salt and of course the butter are just perfect. They must be crispy on the outside and chewy on the inside.

    I love molten lava chocolate souffle from Joey’s restaurant. It’s soft and smooth with melting center. Simple, but very indulgent. It’s usually served with vanilla ice cream, which provides a nice contrast to the warm souffle. It’s rich, but not overly sweet, just perfect.

    So much can be done with chocolate that the possibilities are nearly endless. I went to a restaurant once and ordered a flour-less chocolate torte. One of the most amazing desserts I’ve ever had. The chocolate wasn’t overpowering and didn’t taste like it was processed. It tasted like natural chocolate but it was exquisite.

    Anything with chocolate is a winner in my books! I really love the molten chocolate souffle at Joey’s and the lava cake at Cactus Club. Oh, and the 2 bite brownie at Moxies! Can you tell I love chocolate?

    The wife loves chocolate so we’re always ending our meals with some chocolate dessert or other. So far my favorites are the lava cake at Cactus Club and the banana bread pudding at Burgoo.

    Here’s another one for lava chocolate souffles. The right amount of rich smoothness mixed with some vanilla ice cream is way too good. Could eat it all day long!

    I’ll have to say my favourite way to enjoy chocolate is with a silky chocolate mousse.  The richness of chocolate with the smooth light texture is unbeatable.  Plus you can add awesome berries or herbs on top to each.

    Without a doubt…homemade s’mores over a campfire, but using really good dark chocolate pieces & not just your typical Hersey’s or Cadbury bars (no offense to anyone). 

    But when you toast that marshmallow just right with a slight burnt crust + fresh graham crackers (lower fat ones don’t count!) + your decadent slab (not piece) of good dark chocolate = chocolate titillation in your mouth!

    The best chocolate dessert would have to be warm, fresh out of the oven red velvet cake with cream cheese frosting. It’s so decadent and delicious, and I love the way the cheese in the icing plays off the warm, sweet chocolate. Not to mention it’s lovely to look at.
